  • 1 lb skin-on Chicken Thighs
  • ¼ tsp Salt
  • ⅛ tsp Black Pepper
  • 1 tbsp Oil
  • 4 tbsp Sake
  • 1 tbsp Unsalted Butter

For the Sauce:

  • 2 tbsp Soy Sauce
  • 2 tbsp Sake
  • 1 tbsp Mirin
  • 1 tbsp Sugar
  • 4 Garlic cloves, minced

INSTRUCTIONS

  1. Season chicken thighs with salt and black pepper.
  2. Coat each chicken thigh with sweet potato starch, ensuring even coverage and dusting off excess starch.
  3. In a separate mixing bowl, combine all the sauce ingredients – soy sauce, sake, mirin, sugar, and minced garlic.
  4. In a frying pan set to medium heat, sear the chicken starting with the skin side facing down for approximately 4 minutes.
  5. Turn the chicken thighs over and sear the other side for another 4 minutes.
  6. Pour sake into the pan and continue to cook with the lid on until most of the liquid has evaporated.
  7. Incorporate the prepared sauce and a knob of butter to the pan.
  8. Allow the sauce to thicken and ensure that the chicken is well-coated.
  9. Once cooked to perfection, serve the chicken with a side of freshly cooked white rice.
