  • 2 tbsp oil
  • 8 cloves garlic, minced (divided into 2 portions)
  • 4 lbs clams (scrubbed and purged)
  • 1 cup white wine
  • ½ cup water
  • 2 tbsp butter
  • pinch red chili flakes or as much as you like
  • ½ medium onion (minced)
  • ¼ cup heavy cream
  • ½ cup Parmesan grated
  • ¼ cup parsley fresh, finely chopped
  • 1 lb spaghetti

To Serve

  • Parmesan grated
  • red chili flakes
  • black pepper fresh cracked
  • fresh parsley finely chopped

INSTRUCTIONS

  • Prepare Clams and Sauce:
    • In a large sauté pan, heat oil over medium-high. Add half the garlic and sauté until golden. Be careful not to burn it.
    • Add two-thirds of the clams, white wine, and water. Cover and steam for about 5 minutes until the clams open. Remove opened clams to a bowl; discard any that do not open.
    • Continue to simmer the liquid in the pan until reduced by half, then set aside for later use.
  • Prepare Pasta:
    • Bring a large pot of salted water to a boil for the pasta.
  • Cook Remaining Ingredients:
    • Using the same sauté pan, melt butter and add the remaining garlic, chili flakes, and onion. Sauté until the onion is soft, about 5 minutes.
    • Add heavy cream, reserved clam meat, and reduced wine sauce to the pan. Stir well, being careful to leave any grit behind.
    • Add the remaining whole clams, cover, and steam until they open, about 5 minutes. Discard any clams that do not open.
  • Cooking Pasta:
    • Cook linguine in the boiling water until al dente, usually a few minutes for fresh or according to package instructions for dried pasta.
  • Combine and Finish:
    • Drain the pasta and add it directly to the pan with the sauce. Toss to coat the pasta thoroughly.
    • Stir in grated Parmesan and chopped parsley.
  • Serve:
    • Divide the pasta among four bowls, ensuring to distribute clams and sauce evenly.
