  • Chicken breasts/thighs: 1 lb (450 g)


Marinade

  • Light soy sauce: 1 tbsp
  • Shaoxing wine: 1 tbsp
  • Cornstarch: 1 tbsp


Sauce

  • Chicken broth: 1/2 cup
  • Light soy sauce: 2 tbsp
  • Shaoxing wine: 2 tbsp
  • Dark soy sauce: 1 tbsp
  • Cornstarch: 1 tbsp
  • Sugar: 1 tbsp
  • Coarsely ground black pepper: 2 tsp


Stir fry

  • Peanut oil: 2 tbsp
  • Ginger (minced): 1 tbsp
  • Garlic (minced): 4 cloves
  • Onion (chopped): 1/2
  • Bell peppers (chopped): 2

INSTRUCTIONS

  • In a bowl, marinate chicken with soy sauce, Shaoxing wine, and cornstarch for 10 to 15 minutes.
  • In a separate bowl, mix all sauce ingredients and set aside.



  • Heat 1 tbsp oil in a skillet over medium-high heat. Add chicken, spreading it out. Sear for 2 minutes each side. Remove chicken.
  • Add 1 tbsp oil to skillet. Sauté ginger and garlic until fragrant.
  • Add onions and bell peppers, cooking for 3-4 minutes until softened.

  • Stir sauce to dissolve cornstarch, pour into skillet. Cook until sauce thickens.
  • Add chicken back to skillet, stir to coat with sauce. Cook until chicken is done.
  • Serve immediately with steamed rice.
