INGREDIENTS

Marinade

  • 1/2 pound beef flank
  • 1 tbsp light soy sauce
  • 2 tsp cornstarch

Sauce

  • 2 tbsp Shaoxing wine
  • 2 tsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar

Stir Fry

  • 8 ounces wide dried rice noodles
  • 3 tbsp vegetable oil
  • 4 garlic cloves, minced
  • 1 tsp minced ginger
  • 1 cup bean sprouts
  • 4 green onion stalks, chopped
  • 2 tsp sesame oil (Optional)

INSTRUCTIONS

  • Marinating the Beef: Thinly slice the beef against the grain into 1/8-inch thick pieces or 1/4-inch strips. In a small bowl, combine the beef slices with light soy sauce, Shaoxing wine, and cornstarch. Mix gently with your hand until the beef is evenly coated with the marinade. Let it sit for 15 minutes to marinate while you prepare other ingredients.
  • Preparing the Sauce: In a separate small bowl, mix together Shaoxing wine, light soy sauce, dark soy sauce, sugar, and 2 tablespoons of water. Stir well to ensure the sugar is dissolved and set aside.
  • Blanching the Vegetables: Bring a large pot of water to a boil. Blanch broccolini or broccoli for about 1 minute until just tender. Remove the vegetables and set them aside, but keep the boiling water for the noodles.
  • Preparing the Noodles: Using the same boiling water, cook or soak the rice noodles as per the package instructions until they're cooked but still slightly chewy. Rinse the noodles under cold water, drain, and then toss them with 1 teaspoon of sesame oil to prevent sticking.
  • Frying the Beef: Heat 1 tablespoon of vegetable oil in a large nonstick skillet over medium-high heat. Arrange the marinated beef slices in a single layer in the skillet. Cook without moving them until the bottom side is golden brown, about 1 minute. Flip and cook the other side until browned but still slightly pink inside, about 30 seconds to 1 minute. Transfer the beef to a plate.
  • Stir-Frying Aromatics: In the same skillet, add another tablespoon of oil and reduce the heat to medium. Add minced garlic, ginger, and chopped onion. Stir constantly until fragrant, about 15 seconds.
  • Combining Noodles and Beef: Add the drained noodles to the skillet, along with the final tablespoon of oil. Toss well to coat the noodles in oil. If they begin to stick, add a little water to loosen them. Return the beef to the skillet, pour in the prepared sauce, and toss everything together vigorously to ensure the noodles and beef are well coated in the sauce.
  • Final Additions: Stir in the chopped green onions, allowing them to wilt slightly from the heat. Follow with the bean sprouts, tossing to combine everything well. Drizzle with sesame oil (if using) for an added layer of flavor.
  • Serving: Once everything is heated through and well mixed, remove from heat and transfer to serving plates. Serve hot as a hearty main dish.

Enjoy! ♡
