  • 1.5 lb pork ribs (cut into 2" pieces)
  • 3 tbsp vegetable oil
  • 4 slices ginger
  • 1 tbsp Shaoxing wine
  • 2 tbsp dark soy sauce
  • 3 tbsp rice vinegar
  • 4 tbsp brown sugar
  • 5 tbsp water

INSTRUCTIONS

  1. Blanch pork ribs.
  2. Sauté ginger and brown the ribs.
  3. Add simmering ingredients and cook.
  4. Reduce and thicken the sauce.

INGREDIENTS

  • 1.5 lb pork ribs (cut into 2" pieces)
  • 3 tbsp vegetable oil
  • 4 slices ginger
  • 1 tbsp Shaoxing wine
  • 2 tbsp dark soy sauce
  • 3 tbsp rice vinegar
  • 4 tbsp brown sugar
  • 5 tbsp water

INSTRUCTIONS

  1. Prepare pork ribs by blanching in boiling water for 5 minutes.
  2. Drain ribs and set aside.
  3. Heat vegetable oil in a pan; sauté ginger slices for about a minute on medium heat.
  4. Add the ribs to the pan, increase heat to high, and brown them on all sides.
  5. Lower the heat, then pour in Shaoxing wine, dark soy sauce, rice vinegar, brown sugar, and water.
  6. Mix well and increase heat to bring the mixture to a boil.
  7. Once boiling, cover the pan and reduce heat, letting it simmer for 30 minutes. Stir occasionally.
  8. Uncover and set heat to high, stirring continuously until the sauce reduces and thickens.
